Ingredients
- • 5 g dried rose petals
- • 1 stick cinnamon
- • 2 leaves bay
- • 30 g cumin seeds
- • 30 g coriander seeds
- • 10 g cardamom pods
- • 10 g black peppercorns
- • 5 g cloves
- • 1 whole dried chile
- • 5 g ground nutmeg
- • 5 g ground mace
Method

Gather ingredients: 5 g dried rose petals, 1 stick cinnamon, 2 leaves bay, 30 g cumin seeds, 30 g coriander seeds, 10 g cardamom pods, 10 g black peppercorns, 5 g cloves, 1 whole dried chile, 5 g ground nutmeg, 5 g ground mace. Tools needed: medium skillet, spatula, spice grinder, airtight container.

Remove and discard stems from the dried roses.

Heat rose petals, cinnamon, bay leaves, cumin, coriander, cardamom, peppercorns, cloves, and chile in skillet over medium-high heat, stirring until cumin browns.

Transfer toasted spices to grinder, add nutmeg and mace, and grind into a fine powder.
