
Homemade Chai
A spicy comforting Indian dish. Ready in about 25 minutes, serves 4.

Ingredients
- • 6 whole green cardamom pods
- • 6 whole cloves
- • 1 stick cinnamon
- • 2 g black peppercorns
- • 1 piece fresh ginger
- • 1420 ml water
- • 3 bags black tea
- • 240 ml milk
- • 50 g sugar
Method

Gather ingredients: 6 whole green cardamom pods, 6 whole cloves, 1 stick cinnamon, 2 g black peppercorns, 1 piece fresh ginger, 1420 ml water, 3 bags black tea, 240 ml milk, 50 g sugar. Tools needed: medium saucepan, mallet or large spoon, teapot, whisk, fine mesh strainer.

Place cardamom, cloves, cinnamon, peppercorns, and ginger in the saucepan and lightly crush using a mallet.

Add 1420 ml water to the pan and bring to a boil over high heat.

Reduce heat to medium-low, partially cover, and simmer gently for 10 minutes.

Remove from heat, add 3 black tea bags, and steep for 5 minutes.

Discard tea bags, add 240 ml milk and 50 g sugar, then bring to a simmer over high heat while whisking.

Strain the chai through a fine mesh strainer into a teapot.

Serve the hot chai immediately.
