
Favorite Lasagna with Sausage, Spinach, and Three Cheeses
A comforting one-pot Italian-American dish. Ready in about 1 hour 45 minutes, serves 8.

Ingredients

- • 450 g Italian sausage
- • 1 large onion
- • 1 tsp salt
- • 0.5 tsp black pepper
- • 3 cloves garlic
- • 1 tsp red-pepper flakes
- • 2 tbsp tomato paste
- • 800 g canned whole peeled tomatoes
- • 1 tsp dried oregano
- • 450 g ricotta cheese
- • 1 large egg
- • 100 g grated parmesan
- • 300 g frozen spinach
- • 350 g no-boil lasagna noodles
- • 500 g shredded mozzarella
- • 1 spray cooking spray

Gather ingredients: 1 tbsp olive oil, 450 g sausage, 1 onion, 1 tsp salt, 0.5 tsp pepper, 3 cloves garlic, 1 tsp red-pepper flakes, 2 tbsp tomato paste, 800 g tomatoes, 1 tsp oregano, 450 g ricotta, 1 egg, 100 g parmesan, 300 g spinach, 350 g noodles, 500 g mozzarella, cooking spray. Tools: large pot, wooden spoon, food processor, medium bowl, dishcloth, 23x33cm baking dish, rimmed baking sheet, foil.

Preheat oven to 190°C with rack in upper third.

Heat oil in pot; add sausage, diced onion, 0.75 tsp salt, and 0.25 tsp pepper. Brown for 10 minutes.

Add minced garlic, red-pepper flakes, and tomato paste; cook 2 minutes. Stir in tomatoes and oregano; simmer 5 minutes while crushing tomatoes.

Pulse ricotta, egg, and parmesan in food processor until smooth.

Squeeze spinach in dishcloth until dry; place in bowl with salt.

Coat dish with spray. Layer 2 cups sauce, 3 noodles, 1/3 ricotta, 1/3 spinach, and 100g mozzarella. Repeat layers twice (skip mozzarella on third layer). Top with remaining sauce and 250g mozzarella.

Cover with sprayed foil; place on baking sheet and bake 45 minutes. Remove foil; bake 20 minutes more.

Remove from oven and rest for 10 minutes before slicing.
