
Penne alla Vodka
A comforting vegetarian Italian pasta. Ready in about 20 minutes, serves 4.

Ingredients
- • 5.7 l water
- • 1 tbsp salt
- • 800 g canned whole peeled tomatoes
- • 450 g penne pasta
- • 60 ml olive oil
- • 3 cloves garlic
- • 1 tsp crushed red pepper
- • 120 ml vodka
- • 120 ml heavy cream
- • 30 g unsalted butter
- • 15 g fresh parsley
- • 100 g grated pecorino or parmesan cheese

Gather ingredients: 5.7 l water, 1 tbsp salt, 800 g tomatoes, 450 g penne, 60 ml olive oil, 3 cloves garlic, 1 tsp crushed red pepper, 120 ml vodka, 120 ml cream, 30 g butter, 15 g parsley, 100 g cheese. Tools: 8-quart pot, food processor, large skillet, knife, wire skimmer, wooden spoon.

Bring 5.7 l of salted water to a boil in an 8-quart pot over high heat.

Pulse tomatoes in food processor until finely chopped but not aerated.

Add penne to boiling water and cook until al dente, approximately 8 to 10 minutes.

Heat olive oil in skillet. Whack garlic cloves and brown them in oil for 3 minutes.

Slide tomatoes into skillet. Bring to boil, season with salt and red pepper, and boil for 2 minutes.

Add vodka to the sauce and simmer at a lively pace.

Remove garlic cloves. Stir in cream and butter until incorporated.

Transfer pasta to skillet. Add parsley and boil until sauce clings to pasta. Adjust salt and pepper.

Remove from heat, toss with 100 g cheese. Serve immediately.
