- • 4 large potatoes

Gather ingredients: 1000 ml vegetable oil, 4 large potatoes, 1 tsp salt. Tools needed: 5-quart heavy pot, mandoline or knife, thermometer, slotted spoon, paper towels, large bowl.

Heat oil in the pot to 163 Celsius over medium heat.

Cut potatoes into 0.6 cm sticks.

Fry potatoes in 5 batches for 90 seconds per batch until soft but not golden, draining on paper towels. Ensure oil returns to 163 Celsius between batches.

Increase oil temperature to 177 Celsius.

Fry potatoes in 5 batches for 300 seconds per batch until golden and crisp, draining on clean paper towels. Ensure oil returns to 177 Celsius between batches.

Season fries with salt to taste.
