
Mayonnaise
A vegetarian gluten-free French sauce. Ready in about 40 minutes, serves 4.

Ingredients
- • 1 unit egg yolk
- • 1 tsp mustard
- • 1.25 g salt
- • 175 ml oil
- • 1 tsp vinegar
- • 1 tsp lemon juice
- • 1 g white pepper
Method

Gather ingredients: 1 unit egg yolk, 1 tsp mustard, 1.25 g salt, 175 ml oil, 1 tsp vinegar, 1 tsp lemon juice, 1 g white pepper. Tools needed: medium mixing bowl, whisk, measuring spoons, plastic wrap.

Whisk together the egg yolk, mustard, and 1.25 g salt in the bowl until combined well.

Add 60 ml of oil drop by drop while whisking constantly until the mixture begins to thicken.

Whisk in the vinegar and lemon juice.

Add the remaining 115 ml oil in a very slow, thin stream, whisking constantly until well blended and smooth.

Whisk in additional salt to taste and the white pepper.

Cover the surface with plastic wrap and chill in the refrigerator until ready to use.
