
Twice-Cooked French Fries
A comforting vegetarian French dish. Ready in about 45 minutes, serves 4.

Ingredients

- • 20 g salt
- • 2000 ml canola oil
- • 5 g black pepper

Gather ingredients: 1500 g russet potatoes, 20 g salt, 2000 ml canola oil, 5 g black pepper. Tools needed: large pot, baking sheet, paper towels, knife, cutting board, slotted spoon, deep-fry thermometer.

Fill a large pot with water and 10 g salt; bring to a boil. Line a baking sheet with paper towels.

Cut potatoes into 0.6 cm thick sticks.

Cook potato sticks in boiling water for 4 minutes until softened.

Transfer potatoes to the towel-lined sheet using a slotted spoon and pat dry thoroughly.

Heat 2000 ml canola oil in a heavy pot to 177 Celsius.

Fry potato sticks in batches for 6 minutes until golden brown.

Transfer fries to clean paper towels; sprinkle with remaining salt and black pepper.
