
Everyday Pancakes
A quick comforting American breakfast. Ready in about 15 minutes, serves 4.

Ingredients
- • 250 g flour
- • 2 tbsp sugar
- • 2 tsp baking powder
- • 1 tsp salt
- • 350 ml milk
- • 2 large eggs
- • 30 g butter
- • 1 tbsp vegetable oil
Method

Gather ingredients: 250 g flour, 2 tbsp sugar, 2 tsp baking powder, 1 tsp salt, 350 ml milk, 2 large eggs, 30 g butter, 1 tbsp vegetable oil. Tools needed: large mixing bowl, medium bowl, whisk, griddle or skillet, ladle, spatula, measuring cups.

Heat a griddle or large skillet over medium-low heat.

Whisk flour, sugar, baking powder, and salt in a large bowl. In a separate bowl, whisk eggs into milk and stir in cooled melted butter.

Gently stir the wet mixture into the dry ingredients until just moistened; do not overmix. Add more milk if the batter is too thick.

Add 1 tsp butter or oil to the skillet. Once shimmering, ladle batter onto the skillet.

Cook for 2 to 4 minutes until bubbles appear in the center and bottoms are brown. Flip with a spatula.

Cook the second side for 2 minutes until lightly browned. Keep warm in a 93 Celsius oven if necessary.

Transfer pancakes to plates and serve immediately.
