Ingredients
- • 500 ml buttermilk
- • 1500 g chicken pieces
- • 250 g flour
- • 1 tbsp paprika
- • 1 tsp cayenne
- • 1 tsp garlic powder
- • 1 tsp salt
- • 1 tsp pepper
- • 500 ml peanut oil

Gather ingredients: 500 ml buttermilk, 1500 g chicken pieces, 250 g flour, 1 tbsp paprika, 1 tsp cayenne, 1 tsp garlic powder, 1 tsp salt, 1 tsp pepper, 500 ml peanut oil. Tools needed: large shallow nonreactive dish, large plastic bag, heavy skillet, deep-fry thermometer, instant-read thermometer, tongs, paper towels.

Place buttermilk in dish, add chicken, cover, and refrigerate for 2 hours.

Combine flour, paprika, cayenne, garlic powder, salt, and pepper in a large plastic bag.

Remove chicken from buttermilk, add to bag, shake to coat, and dust off excess.

Pour peanut oil into skillet and heat to 177 Celsius.

Fry chicken pieces for 10-12 minutes, turning occasionally, until internal temperature is 74 Celsius.
