
The Simplest Roast Turkey

Ingredients

- • 2 tbsp salt
- • 1 tbsp pepper
- • 2800 g stuffing

Gather ingredients: 1 whole turkey, 2 tbsp salt, 1 tbsp pepper, 2800 g stuffing. Tools needed: pliers, roasting pan, oven rack, small bowl, metal skewer, kitchen string, meat thermometer, platter, shallow baking dish.

Remove feathers and quills with pliers; preheat oven to 232 Celsius with rack in lower third.

Rinse turkey and pat dry. Mix salt and pepper in a small bowl and rub into cavities and over skin.

Spoon stuffing loosely into neck and body cavities. Secure neck skin with skewer, tuck wings, and tie drumsticks with string.

Place turkey on rack in roasting pan. Roast, rotating 180 degrees halfway, until thigh reaches 77 Celsius, approx 1.75 to 2.5 hours.

Tilt turkey to drain juices into pan. Transfer turkey to platter and rest for 30 minutes. Remove string.
